Swiss Chard with Kalamata Olives and Feta Cheese

Feta cheese and lemon juice add tang to these hearty greens. Serve with poached chicken or fish for a complete meal.
 

Ingredients

  • 1 bunch Swiss chard
  • 1/2 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tablespoon extra-virgin olive oil
  • juice of 1 lemon (about 3 tablespoons)
  • 1/2 cup pitted sliced kalamata olives
  • 4 ounces feta cheese, crumbled
  • 1/2 cup chopped pistachios
  • 1 teaspoon grainy mustard
  • Pinch ground black pepper

Method

Rinse 1 bunch Swiss chard free of sand and pat dry. Pick through the chard and discard wilted leaves. Trim ends of leaves and discard. In a 12-inch skillet, saute the green onions and garlic in the olive oil until the onion is translucent. Add the lemon juice and continue cooking to heat the lemon juice. Add the chard to the skillet and saute until cooked down, about 5 to 10 minutes. Add the olives, cheese, pistachios, mustard, and black pepper. Mix well.

 

Notes: Serve immediately.
