Yellow squash, tomatoes, capers and Parmesan cheese simmered together for a tasty side dish for diabetics or anyone looking to eat healthy.
 

Ingredients

  • 1 pound yellow squash, shredded
  • 2 large ripe tomatoes, diced
  • 1 large clove garlic, minced
  • Pinch salt and pepper
  • 1 tablespoon capers, rinsed and drained
  • 1 tablespoon Parmesan cheese

Method

Combine all ingredients, except cheese, in a 2 quart pot. Heat over medium heat until squash is tender. Stir in Parmesan cheese. Taste for seasoning.

 

Notes: This is good for diabetics and those on a low calorie, low fat diet. It is also good cold served on a bed of shredded lettuce as a salad.
