Open Face Zucchini Sandwiches

This recipe makes for a great brunch or light lunch dish. You can add a thin slice of cooked turkey or chicken for a heartier sandwich.
 

Ingredients

  • 2 cups shredded zucchini
  • 6 slices whole wheat bread, toasted
  • 1/3 cup reduced-fat mayonnaise
  • 1 tomato, sliced
  • 6 slices reduced-fat cheddar cheese
 
Method

Drain as much liquid from the zucchini as you can by gently patting between paper towels. To assemble sandwiches, spread each bread slice with mayonnaise. Put a small mound of zucchini on each bread slice. Top each with a tomato slice, then a slice of cheese. Arrange on a baking sheet. Broil 4 inches from the heat until the cheese starts to bubble. Serve and enjoy!
