A delicious and easy tabbouleh that can also be adapted for other vegetables such as asparagus, or for added sweetness, try raisins. A nice side dish without heating up the kitchen!

  • Servings: 4


1 cup Wheat Germ, soaking in 2 cups of water
2 Medium Tomatoes, diced
1 Medium Onion, diced
1 bunch Scallions, diced
¼ cup Olive Oil
Salt & Pepper, to taste


Soak wheat germ until fully hydrated and drain. Add all the diced vegetables and fold together. Season with olive oil, salt, and pepper.

This recipe has 4 main ingredients plus seasonings, so it's a simple dish with great nutritional value! Easily adaptable to your family's tastes, use whatever vegetable is in season. Great additions are: lemon-grilled asparagus tips, as well as roasted beet chunks! Add raisins or nuts for texture, crunch and sweetness! Use the best olive oil you can find, since you'll be eating it raw. A perfect side dish to grilled meats and no need for turning on the oven!
