Easy Breakfast Quiche

Prepare this lower-fat casserole at your next brunch. Reduced-fat ham, cheese, bread, and milk really lighten up this dish.
 

Ingredients

  • 1 pound 99% fat free ham, cubed
  • 1/2 pound low fat or fat free cheddar cheese
  • 7 slices of low fat bread, cubed
  • 2 cups + 2 tbs. skim milk
  • Egg substitute equivalent to 5 eggs 1/2 tsp. mustard
  • 1 can mushrooms, drained

Method

Mix first three ingredients in a 9x13 pan. In another bowl mix remaining ingredients and pour over first three ingredients. Refrigerate at least 2 hours for the bread to absorb the egg and milk mixture. Bake covered at 325 degrees for 30 minutes and uncovered for 30 minutes. Serve with fresh fruit.
